Zucchini Quinoa Fritters

A perfect vegetarian dish for your weekly meatless Mondays or even could be used as your next dinner party appetizer! Pair with your favorite dip and serve with some creamy avocado. Big points if you use guacamole!

HOW TO:

1. Cook ½ cup uncooked quinoa by mixing it with 1 cup water and simmering on the stove for 15 minutes until fully formed. Or just simply follow the directions on the packaging.

2. While your quinoa is cooking, grate a zucchini and squeeze out the water until you have ½ cup in a bowl 

3. Mix the following in the bowl: 

  • ½ cup panko bread crumbs 

  • ½ cup parmesan cheese 

  • 1 tsp minced garlic 

  • ½ tbsp of onion powder 

  • 2 eggs 

  • ¼ chopped cilantro 

  • Salt and pepper

4. Form into balls and then flatten into fritter shapes. Cook on an oiled skillet on medium heat for 2-3 minutes on each side until browned. If you want the insides to be hardened, I recommend baking them further on parchment paper at 350F for 3-5 minutes on each side.
