Pumpkin Yogurt Bake

Do you have an extra can of pumpkin lying around and looking for a little sweet treat? Try this pumpkin yogurt bake! It doesn’t have to be Fall to want that pumpkin spice flavor. Not only is it packed with protein and healthy fats, but it’s also nutritious AND delicious. Perfect for a quick breakfast or a nighttime snack. 

In a bowl mix until creamy: 

  • 1 cup Greek yogurt 

  • 1 cup pumpkin purée

  • 4 eggs 

  • ¼ cup almond flour 

  • Cinnamon 

  • Pumpkin Pie Spice 

  • A little ginger if you’re feeling it 

  • A dash of vanilla 

  • Optional to sweeten: ⅓ cup of maple syrup, honey, or sugar 

Pour into a 8x8 baking pan & bake at 350 for 40 minutes. The center shouldn’t jiggle. 

Cool completely & then add another layer of Greek yogurt on top. 1.5 cups gives a good layer. Top with maple syrup & crushed nuts! Maybe go crazy & add some peanut butter?
