Ingredients:

4 large carrots, peeled and cut into matchsticks or thin strips

2 tablespoons olive oil

1 teaspoon peri peri seasoning (store-bought or homemade)

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish, optional)

For yogurt dip:

50 gms fat free yogurt

1 tbsp mustard

1 tbsp hot sauce of your choice

Salt to taste

Process:

Preheat the Oven (You can also use an airfryer): Preheat your oven to 425°F (220°C).

Prepare the Carrots:

Peel the carrots and cut them into matchsticks or thin strips, ensuring they are of uniform size for even cooking.

Seasoning Mixture:

In a bowl, mix olive oil, peri peri seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Adjust the seasonings to your taste preferences.

Coat the Carrots:

Toss the carrot matchsticks in the seasoning mixture, ensuring they are well coated.

Arrange on Baking Sheet:

Spread the seasoned carrot fries in a single layer on a baking sheet lined with parchment paper. This helps prevent sticking and makes for easy cleanup.

Bake in the Oven:

Bake in the preheated oven for 20-25 minutes or until the carrot fries are golden brown and crisp around the edges. Toss the fries halfway through the baking time for even cooking.

Garnish and Serve:

Once out of the oven, garnish the peri peri carrot fries with fresh chopped parsley if desired.

Dip:

In a bowl mix together the ingredients for the yogurt dip and serve with the fries!
