Galentines (or anytime) Snack Recipes

HAPPY BELATED VALENTINE’S DAY!! Valentine’s day is such a fun excuse to make some super delicious sweet treats for all the people you love in your life! 

For these recipes, I’ve infused a Valentine's Day twist into two classic favorites: crinkle cookies and chocolate-covered strawberries. They are easy to make, fun, and surely something everyone will enjoy.

For the first one, I made red velvet crinkle cookies with white chocolate chips. 

Crinkle cookies are the perfect treat, both crunchy on the outside and fudgy on the inside. I used this amazing recipe from @tutti_dolci. https://tutti-dolci.com/red-velvet-crinkle-cookies/, (https://tutti-dolci.com/red-velvet-crinkle-cookies/) and they came out sooo good! 

Ingredients:

Cookie dough

  • 2 cups (280 g) all-purpose flour

  • 1/3 cup (32 g) unsweetened natural cocoa powder

  • 1 tsp (5 g) baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp (3 g) salt

  • 1/2 cup (112 g) unsalted butter, at room temperature

  • 3/4 cup (150 g) granulated sugar

  • 1/2 cup (100 g) light brown sugar

  • 2 large eggs (100 g)

  • 1 tsp (4 g) vanilla extract

  • 1 tsp (5 g) lemon juice

  • 1 Tbsp (21 g) red gel food coloring

  • 1 1/2 Tbsp (22 g) milk

  • 3/4 cup (128 g) white chocolate chips

For Rolling

    ⁃    1/2 cup (100 g) granulated sugar

    ⁃    1/2 cup (60 g) powdered sugar

Assembly:

  • Whisk dry ingredients (except for sugars) together in a medium bowl

  • Mix your sugars and softened butter with a mixer (either hand held or kitchen aid) for about 2 minutes until creamy

  • Now, add your eggs one at a time, vanilla, lemon juice, and food coloring until combined

  • With the mixer on low, add your dry ingredients slowly and mix until just combined

  • Add milk on low speed until just combined as well

  • Fold in your white chocolate chips, and cover and put dough into fridge for about 2 hours so that it is not so sticky

  • Now, preheat the oven to 350°F

  • Line a baking sheet with parchment paper

  • Next, add your granulated sugar and powdered sugar into two separate bowls

  • Spray your hand and spoon so that the dough doesn’t stick, and form about 1.5 inch balls

  • Roll first in the granulated sugar, and then into the powdered sugar and place on baking sheet about 2 inches apart

  • Cook in the oven for 12 minutes, and rotate the pan halfway through

  • Let cool for at least 5 minutes, and you have some lovely crinkle cookies!

For the second recipe, I made what I like to call, “fancy chocolate covered strawberries.” Chocolate covered strawberries are such a delicious classic for a reason, so I decided to put a spin on it. These are chocolate covered strawberries filled with a cheesecake filling, and coated in toppings. I was inspired by https://www.delish.com/cooking/recipe-ideas/a47073/cheesecake-stuffed-strawberries-dessert-recipe/, but I made some adjustments to it and made it my own.

Ingredients:

Filling:

    ⁃    2 boxes of cream cheese (8 oz each)

    ⁃    1/2-3/4 cup powdered sugar (depends how sweet you like it, taste test!)

    ⁃    1/4 tsp salt

    ⁃    3/4 tsp vanilla

    ⁃    1 cup heavy cream

Strawberries/Chocolate/Toppings:

    ⁃    2 boxes strawberries 

    ⁃    1 bag semi sweet chocolate chips 

    ⁃    1 bag white chocolate chips 

    ⁃    Graham crackers 

    ⁃    Valentines or pink sprinkles 

    ⁃    2 tbsp vegetable oil 

Assembly:

  • Firstly, wash strawberries, and cut off stems and bottoms

  • Now, core each strawberry with a knife so that we can stuff them 

  • Now, crush some graham crackers, and put them in a bowl, and put your sprinkles in a separate bowl (we will dip the strawberries in there)

  • Then, melt your semi sweet chocolate in increments of 30 sec until melted

  • Add about 1 tbsp of vegetable oil to the chocolate to make a runnier consistency   

  • Now, dip each strawberry about 3/4 of the way, and use a fork to let the excess chocolate drip back into the bowl

  • Now alternate between dipping your chocolate covered strawberries into either the sprinkles or graham crackers

  • Leave about 1/3 of the dipped strawberries plain with no topping 

  • For those ones, melt some white chocolate the same way as the semi sweet and add oil as well, and drizzle on top of them 

  • Now, put those in the freezer and let harden 

  • For the filling, best your cream cheese for about 2-3 min until smooth

  • Now, add all the rest of the ingredients except the powdered sugar and blend until smooth 

  • Add your sugar, and beat until fluffy

  • Put filling into a piping or ziplock bag, and fill strawberries 

  • Top with extra graham cracker crumbs, and there you go!!!
