Standard breakfast might include a banana on the side of your cereal bowl, but why not make the banana the star? A warm, sweet banana can be a game changer on a cold winter morning, when the snow is piling up the windowsills. This banana is also a great idea for a summer dessert, topped with a scoop of homemade vanilla ice cream.
One unpeeled banana (that fits in your pan)
Split the banana in half the long way, sprinkle the exposed flesh with a bit of brown sugar. Drop a spoonful of coconut oil into the pan, and let it melt over medium high heat. Place the banana skin side up in the pan. Allow 4-5 minutes for the sugars to caramelize; remove from the pan when the sugars are golden and the flesh is soft.
Serve with your morning tea or coffee and a handful of almonds. Spoons work best for scooping bites of warm banana out of the peel.
